The taste of EAUX POSSE came about en route.
Destination: Cadaqués, the village where Salvador Dalí lived, in Port Lligat, next to the natural park of Cap de Creus.
We drive there every year. Usually more than once.
There are three routes. To the left, the east: Brussels, Metz, Nancy, Lyon. Straight through the middle: Paris, Clermont-Ferrand. Or, when the diary allows, to the right, the west: Paris, Tours, Île de Ré, Biarritz, the Basque Country, Asturias, and then across the Pyrenees.
We naturally favour the third option.
What always stays with us are the flavours. The dishes, of course, but above all how gastronomy feels. The classic French kitchen, neatly suited, alongside the considerably less tidy cooking of Catalonia and the Basque Country. In harbour towns one tastes the meddling of centuries of seafarers. That is a compliment.
We translate those flavours to Dutch produce.

We cook whatever we ourselves are hungry for. With a “refined coarseness”. And that last part is a deliberate choice.
